The simplest but most delicious way to cook fish with perfect results every time. You will not believe how easy this.

Ingredients
- 1 x cedar plank
- 4 x 150g portions of fish (oily fish is the best for this, ethical salmon, trout or mackerel.)
- 1 x tbsp vegetable oil
- Pinch of Salt and pepper
Method
STEP 2 : Then prepare the grill for direct grilling. Learn how in barbecue Basics with the temperature sitting around 180°C - 200°C.
STEP 3 : Next, place the plank directly onto the grill and leave for 5 minutes or until the plank begins to smoke, then turn the plank over.
STEP 4 : Season the fish and place onto the plank.
STEP 5 : Put the lid onto the barbecue with the vents slightly open and cook for 15 - 20 minutes. During this time the fish will cook and smoke at the same time.
STEP 6 : Remove the fish from the barbecue and serve alongside a green salad, a simple dressing and a wedge of lemon.
