
Great with venison
Venison is a rich, earthy, festive-tasting meat. Often imbued with hints of the acorns, sage and herbs that the deer enjoyed during its life. When cooked over fire, we love it best with simple seasoning to create a truly rustic dish that allows the natural flavours of the meat shine through.
Tip: Make sure your grill is preheated to a medium-high heat before adding the venison. This helps to sear the outside of the meat and lock in juices. As venison is lean, it can become tough if overcooked. Keep a close eye on it while grilling and when slicing the cooked venison, be sure to cut against the grain to maximize tenderness.
