Great with fruit
Sweet, warm, caramalised fruit cooked over fire is top-tier.
Although less traditional, grilling fruit can create a fantastic fire-cooked dessert or accompaniment for savoury ingredients. Pineapple, peaches, plums, watermelon, mangoes, and bananas are all excellent choices because they hold their shape well and develop a sensational char when grilled.
Tip: Lightly brush the fruit with oil to prevent it from sticking to the grill and to help it develop a beautiful caramelized exterior. While fruits are naturally sweet, you can enhance their flavor by sprinkling them with a pinch of salt or a dusting of cinnamon, nutmeg, or other spices before grilling. Place the fruit directly on the grill grates over medium-high heat. Cook for a few minutes on each side, or until grill marks form and the fruit begins to soften. Be careful not to overcook, as it can become mushy.
