Made by our great friends from Whittle and Flame from their new home in North Devon, Smoking chunks are an essential flavour enhancer to your barbecue - but choose carefully to match what you wish to add smoky flavour to, as they vary greatly.

The Whittle Alder chunks are sustainably sourced from local British Woodlands and kiln dried for perfect performance.  Alder is traditionally used to smoke fish as it adds a subtle sweet and smoky flavour that enhances the flavours of your food as opposed to adding a more thicker smoke taste more associated with Oak. Ideal with fish and chicken, it is also superb on thinner cuts of pork or beef.

  • To be used as a flavour enhancer and not a form of heat
  • Use Alder chunks to add a gentle, earthy and musky smokiness to your white meats and fish - 
  • Made from sustainable Alder from a British forestry management programme
  • Use sparingly, a little goes a long way and too many chunks could overpower
  • Use two or three to a cook, and use more next time if a stronger flavour is required
  • Split chunks down if you need less smoke or shorter smoking time
  • We recommend not to soak before use – it’s science but put simply, adding wet chunks messes with your temperatures

Flavour Profile

Remember that our great quality charcoal adds a very subtle smoke falvour, so add chunks for a more defined smoky taste. These Whittle Alder chunks deliver a mild, slightly sweet and earthy flavour - it won’t compete against deeper rub and sauce flavours so best to use simply with fish, poultry and thinner meat cuts.

Origins & Production

Working from their new yard in North Devon (Yipee!) Whittle and Flame use trees felled as part of a British whole-woodland management plan. Their focus is on regenerating biodiversity and vigorous healthy growth ensuring a future for these essential habitats for generations to come.

Express delivery is next business day for all orders placed before 13:00pm, Monday - Friday. Any orders placed on Friday after 13:00pm will be sent out for delivery the following working day.

Saturday delivery is the next available Saturday from when the order is placed up to 13.00 p.m. on a Friday.

Express and Saturday delivery orders are shipped via DHL. You will receive your tracking number via your given email with an estimated delivery window, followed by a confirmed delivery window. You can track your order at any time using DHL’s track and trace or download the DHL app on your device to manage your delivery.

Unfortunately, we cannot send express delivery to Northern Ireland, Jersey, the Hebrides, Orkney, Isle of Man, Isle of Wight, Felixstowe, Aberdeen, Northern Highlands, Republic of Ireland, Argyll, Glasgow, Dundee, Guernsey, Shetland Islands, Isle of Scilly and Cornwall. However, it’s worth the wait.
